Spicy Black Bean Sweet Potatoe Soup!

Do you want to learn how to make this delicious, healthy, hearty, filling Spicy Black Bean Sweet Potato Soup?! I got the recipe over at Cinnamon Spice And Everything nice

I was looking in my kitchen pantry deciding what I can possibly make with sweet potatoes and black beans and discovered the beautiful recipe! It takes about 40 minutes to prep and cook. I promise you this will be the best soup you've ever had in your life.

Ingredients:
  • Black beans
  • 2 Sweet Potatoes
  • 2 Chicken thighs
  • Frozen mixed veg
  • Tomato Sauce
  • 3 Bacon strips
  • 1 Celery stalk
  • 1 cup onions
  • 1 cup green pepper
  • 1 cup frozen spinach
  • Pepper, Lawry's Seasoning, Chicken Seasoning, Chili Powder, Garlic Powder, Crushed Red Pepper

Instructions: 
Season chicken thighs with seasonings listed above. In a medium skillet, put 1 tbs of oil. Cook season chicken thighs on both sides for 10 minutes. When cooked, put heat on medium low.

Chop sweet potatoes in squares. Keep skin, good for fiber. Microwave sweet potatoes in a microwavable bowl for 5 minutes.

In a pot, pour black beans (or canned which is fine) in pot, heat for 5 minutes. Pour in tomato paste. Add in chopped celery, onions, green pepper, and frozen spinach. Stir until it becomes a thick consistency. Add all seasoning listen to your liking. Begin with little of each and alter it to your preference. I enjoy spicy food so I loaded on the chili powder.

Add microwaved sweet potatoes into the soup.

Chop 3 bacon strips into bits and cook on a separate stove top. Once cooked, add into stew. This will give the soup flavor and a nice crush.

Get a bowl, and take a nice scoop and set it. You can cut up the chicken and put it into the soup  or eat it how it is displayed in the picture.
