Recipe: Perfect Coconut Flour Pizza

The first time I made this coconut flour crust pizza.. it was a success! But I knew that there was something different with the dough. I could almost "tell" it was not regular dough. I forget to add enough wet ingredients, so it tasted more like a crust than a dough. The second time around after checking out a few recipes, I came up with something a little different... are you ready?


Ingredients:

4 large eggs
1 cup milk
1/2 greek yogurt.. trust...
 1/4 Coconut Flour
1 tbls baking powder
1/3 cup of parmesan cheese
1/2 cup of grated/shredded mozerella cheese
1 tps minced garlic (or 1 garlic clove and mash up)
1 tps garlic powder
1 tps onion powder
1 tps basil
1 tps melted butter (for coating)
1/4 tps sea salt
1 bag of shredded cheese (any kind .. cheddar mozerella etc)
1 cup of pizza sauce

*You will NEED wax paper to put on your baking pan*

*Optional: Pepperoni, chicken, bbq sauce, etc. This is when you get to be creative and add your favorite toppings! Load up on the veggies!

Instructions:
Preheat oven at 375 degrees

Whisk 4 eggs in a bowl. Add all seasonings, minced garlic, onion powder, sea salt, basil.

Put 1 cup of milk, shredded mozerella, put in blender for 1 minute. The mozerella should be in tiny chucks.. goal is to try to mix it into the milk as possible. Pour milk and mozerella into egg mixture. Add parmesan cheese.. mix.

Add 1/4 cup of coconut flour and mix. The consistency should mimick pizza dough once you mix it for about 2 minutes. It will be thick, yet flexible. If it looks like pancake batter, add a little bit more powder.

 Mix 1/2 cup of greek yogurt into the pizza dough

 Mix the dough with your hands. You should be able to make mini dough balls and have them stick together.


Take the wax paper and put on the pizza pan. Spread out the dough thinly and evenly across the wax paper. Get it as thin as possible because it will rise. Once you achieve the pizza shape you want, add a thin coat of melted butter. It should look like this below..




 
Put into the oven for 20 minutes. Once the 20 minutes is up.. flip it over carefully and cook the other side for another 5 minutes. (20 minutes total on 375)

Add the pizza sauce and shredded cheese
Now it's time for the fun! Load up on your toppings. On the left I did BBQ chicken (marinated chicken in bbq sauce, sauteed in pan, added mushroom, green pepper, red pepper, onions, cherry tomatoes.. total cook time 15). On the right is basic pepperoni 
Put the pizza in the oven for about 15 minutes on 400 degrees. Make sure you keep an eye on it every 5 minutes. 

Once the pizza is done, set it aside and let it cool for 5 minutes before you dig in!

This pizza is completely GUILT FREE! It's low on carbs, high on fiber, loaded with veggies, calcium, and is supper filling. I only ate 3 slices and drank about 3 glasses of water after. This is the perfect meal for weekend dinners when you have a little extra time. Put on your favorite movie, cuddle under your blankets, and enjoy some pizza!
