1/4 dry coconut flour
2 whole eggs
Crack eggs. Whisk eggs until they are frothy (foamy). usually takes within 3-4 minutes
Add 1/2 milk, cinnamon, nutmeg, a pinch of salt, vanilla extract, sweetener (I use agave nectar).
Add 1/4 coconut flour. Whisk. The consistency should be like pancake batter. Not too watery not too thick. If it's too watery.. add a little more coconut flour
On non stick pan, let butter melt. Put heat on low/medium.
Slowly pour your pancake batter in little small circles. Watch over your pancakes so they do not burn. Flip every 2 minutes. Coconut flour is different than regular flour.
Once your pancakes are stacked.. feel free to add any fruit, nut butter, or chocolate pieces on top. Decorate it and make it your own!
