Spicey Oven Baked Chicken Thighs

If you're looking for a little spice in your life, keep reading.  One thing I love about protein is that you can season it however you like. Just because you are eating healthier doesnt mean you cant have any flavor! I love experimenting with different spices and what I made last night was EPIC!

I meal prepped for James and used chicken thighs, spaghetti sqash, picklis (Haitian spicey cole slaw) and broccoli. If you want this meal, the instructions are below!

Total meal prep and cooking took 1 hour 30 minutes.
 Ingredients
Chicken Thighs
Onion
Green Pepper
Pinch of salt
Pepper
Chicken Season
Chili Powder
Hot Sauce

Instructions

Season chicken thighs with ingredients listed above. Be generous with most of the seasoning except with the salt.

Chop onions and green peppers, add in mixture of chicken thighs. Let marinate for 30 minutes

While marinating preheat oven at 375 degrees.
Add chicken thighs, onions, and green peppers in baking dish

Bake for 45 minutes, or until chicken thighs has a nice crust like so....


  

OPTIONAL
 Spaghetti Squash, bake whole in oven on baking rack at 400 degrees for 1 hour.
Let cool for 20 minutes
Cut in half
Scoop out seeds with a fork.
Scoop out "squash noodles" until all that is left is the skin of the squash.

Feel free to experiment with the noodles here. In the picture I added parmesan cheese, garlic, onion, green pepper, and a little salt.
